Aspasia, the restaurant of chef Stavriani Zervakakou, sits in the heart of Mani, where she crafts a cuisine that is seasonal, rooted in place, and deeply delicious.
I was honored to be invited by Stavriani to cook alongside her for a one-night summer feast inspired by the sea, land, and spirit of Mani.
Guests gathered at long communal tables in the garden, sharing dishes that reflected the ripeness of the season: fresh fish and seafood, sun-sweet vegetables, wild herbs, and fragrant local fruit.
A fleeting celebration of what is local and alive, cooked in collaboration, offered in communion.
