Better late than never!
Here are some images of the book published last year by the Onassis Foundation for the Onassis Air residency, a project that I participated at during the months of February and March 2021.
My contribution to this “watery” publication was a text and a recipe for a mountain tea kombucha. A recipe inspired by and adapted from the original kombucha recipe of Rene Redzepi and David Zilber included in the book “The Noma Guide to Fermentation” (2018)
