Lunch for Hermès

Had the pleasure of being a part of the cooking team responsible for the private lunch for 80 international journalists invited by Hermès. Held in the most spectacular Koumelas green marble quarry in the north of Tinos, everything was made possible with the force of a super team, under the creative direction of Valentine Miniconi of BouiBoui, Tinos.

Guests were served a simple menu of local and seasonal ingredients like marinated artichoke with orange, a Greek salad with capers, pickled onion and local soft cheese, root vegetables and fish baked in clay and refreshing sorbets with almond, pistachio, olive oil and salt. Wine was provided by Domaine de Kalathas, a natural wine producer based in Tinos.
